Are you looking for cheap, healthy meals? Me too. In fact, it can easily be done with foods like Blueberry Chia Seed Pudding. If you would like to know more, my newest blog features cheap, healthy meals for only $1 or $2 a serving. In that article, I highlighted my top five favourite budget-friendly foods. In case you were wondering, I ALWAYS have these items in my kitchen: lentils, milk, potatoes, eggs and canned tomatoes. They are the base of many cost-effective, delicious, good-for-you meals.

Blueberry Chia Seed Pudding ingredients

Chia seed pudding is one of my fave quarantine snacks right now. It’s sweet, filling and oh-so-flavourful. I use 1% milk for the base to give 8 grams of protein, a third of my daily calcium along with 15 essential nutrients such as vitamin D, magnesium and phosphorus. In addition, one cup of milk costs only $0.25; talk about nutrition bang for your buck. Chia seeds cost $0.50 for three tablespoons. Are you ready for your nutritious $1 snack or breakfast?

Here’s how to make this Blueberry Coconut Chia Seed Pudding:

  • Serves: 1
  • Prep time: 5 minutes

Ingredients:

  • ¼ cup fresh or frozen blueberries
  • 1 cup of milk (I use 1% milk but use your preference)
  • 1-2 tsp Maple Syrup
  • 3 Tbsp chia seeds

Toppings: Shredded coconut

Directions for Blueberry Chia Seed Pudding:

  1. In a blender mix 1/4 cup blueberries with 1 cup of milk. I add 1 tsp of maple syrup for a little extra sweetness. Then blend on high for about 10 seconds.
  2. Pour blender smoothie contents to a mason jar and add 3 Tbsp of chia seeds. Seal the jar and give it a good shake.
  3. Let chia seeds rest in the jar for about 5 to 10 minutes. Then give the jar with milk and chia seeds another firm shake. I often open it and stir it with a whisk to ensure seeds are not clumped.
  4. Now place your mason jar back in the fridge overnight. Give it another firm shake it the morning or before serving.
  5. Top your Chia Seed Pudding with shredded coconut and blueberries. Enjoy!

This Blueberry Chia Seed Pudding is sure to please the palate!

Ingredients
