I usually went for the candy aisle, but one week, a 3 pack of giant streusel orange muffins caught my eye. Oh. My. Lands. I fell in love. Over the years, I had more than my fair share of those orange streusel muffins. They were one of my favorite breakfast items in college. Picking really tastyjunk food is like my spiritual gift.In my lack of understanding of nutrition, I was thinking: Muffins are healthy! Even the double chocolate chip cookies, and peanut butter reese’s cup cookies scored higher.

Those big boys pack in 230 calories per serving…and the serving is half of a muffin. I’ve never in my life eaten half of a muffin, and I don’t intend to start now.

I also don’t intend on ever eating one of those orange streusel muffins again, since I now have THESE.

If you’re following the Trim Healthy Mama plan, the beauty of this particular recipe is that you can make it a FP, and add some fruit to it to create an E (energizing healthy carb breakfast), OR you can use healthy fats and enjoy it as a satisfying S breakfast or snack.

Now, taking a recipe that’s FULL of white flour, junky fats, and mega amounts of sugar into a healthy and delicious recipe seemed impossible at first, but I think I nailed it. Instead of using orange juice, fats, sugars, and food coloring, I used healthy ingredients, sugar subs that have no blood sugar impact. And pumpkin puree adds a lovely orange color!

Low Carb Orange Cream Muffin [FP, E or S]

SO yummy! This is a healthified version of the really naughty orange muffin I used to enjoy as a teen. Instead of being high fat and high sugar, You can choose to make a low fat, sugar free version OR a low carb, healthy fats version. Makes one GIANT muffin or two to three average sized muffins.

Ingredients


  • FP Version (low fat, low carb)
  • ⅓ cup Trim Healthy Mama baking blend
  • 3 Tablespoons egg white
  • 1 teaspoon orange extract or flavoring or 5 drops pure orange essential oil
  • 2 teaspoons Trim Healthy Mama Sweet Blend or 2 packets Truvia or sweetener of your choice to taste
  • 2 Tablespoons 0% plain Greek yogurt
  • ½ teaspoon baking powder
  • 1 Tablespoon canned pumpkin (NOT pumpkin pie mix)

    S Version(low carb & healthy fat)

  • ⅓ cup baking blend
  • OR 2 Tablespoons flax seed meal + 1 Tablespoon coconut flour
  • 1 egg
  • 1 Tablespoon butter
  • 2 teaspoons Trim Healthy Mama Sweet Blend or 2 packets Truvia or sweetener of your choice to taste
  • 1 Tablespoon 0% plain Greek yogurt
  • 1 teaspoon orange extract or flavoring or 5 drops pure orange essential oil
  • ½ teaspoon baking powder
  • 1 Tablespoon canned pumpkin (NOT pumpkin pie mix)

    Streusel

  • 1 Tablespoon protein powder
  • 1 teaspoons butter, chilled or room temperature
  • 2 drops orange essential oil
  • 2 teaspoons sweet blend or 2 packets Truvia or sweetener of your choice

Instructions

  1. Mix all muffin ingredients in a small ramekin or mug with a fork.
  2. Mix streusel ingredients in a small dish, cutting in the butter with a fork.
  3. Top muffin with streusel mix (use half of streusel mix for FP version to keep it lower fat)
  4. Microwave for 90 seconds or bake for 30 minutes or 15-18 minutes in 2-3 muffin tins in a *350 oven. Play with your baking time to get these just set but not dry, especially if you're using the lower fat recipe. Microwaves and ovens vary, so check frequently with your fist time baking and make a note right here on the recipe for next time. 🙂

To enjoy this muffin in a FP or S mode, simply follow recipe and enjoy. You may add a side of Greek yogurt with berries to fill out a Fuel Pull breakfast, or bacon, sausage, or really anything besides fruits or grains for an S meal.
